Catered by Will Good Catering, Sunrise Beach, Tx.

 

First Course - Fish: Baked Tilapia with Lemon Garlic Caper Sauce Flaky tilapia baked

in a tangy white wine and lemon garlic sauce topped with salty capers, shaved

parmesan, and a parsley, garlic, and lemon zest gremolata. Fresh lemon wedges

dredge in chopped flat-leaf parsley on the table. Curried Rice A Victorian favorite

stemming from the English conquest of India. This pilaf-style Indian spiced rice pairs

well with baked fish and includes mild curry spices, English peas, and carrots.

 

Second Course - Poultry: Herb Encrusted Roasted Turkey Breast Boneless turkey

breast seasoned with salt and pepper and coated in a garlic, salt, and fresh herb butter

then slow roasted until it is moist and flavorful. Served sliced for the table. Faux Giblet

Gravy This faux giblet gravy skips the organs and instead is made with a bit of the

unbaked cornbread stuffing, boiled eggs and creamy mushroom soup. Cornbread

Stuffing A Southern twist on traditional stuffing, this version is made with homemade

cornbread, boiled eggs, chicken stock, creamy mushroom soup, various spices, and the

Holy Trinity with the Pope (onions, bell peppers, and celery plus garlic). Crispy Roasted

Baby Potatoes Halved baby potatoes tossed with olive oil, various seasonings, and

parmesan cheese then roasted cut side down for a golden crisp outside and a soft

tender inside.

 

Third Course - Pork: Garlic Stuffed Pork Roast Moist and flavorful pork roast that has

been stuffed with garlic cloves, coated in various seasonings, refrigerated overnight to

soak in the flavors, and roasted slow and low in the oven. Served sliced into serving-

size medallions topped with a sweet and tangy mustard seed caviar. Brown Pork Gravy

A silky smooth and peppery brown gravy made with pork pan drippings, spices, flour,

and pork bone broth. English Sweet Peas with Pearl Onions Made from an English

staple, this fresh and tasty pea dish pairs well with any family-style meal.

 

Fourth Course - Dessert: Wassail-Style English Trifle A traditional English trifle with a

holiday twist. Sponge cake soaked in Grand Marnier, cranberry jam, Mandarin oranges,

vanilla custard, and holiday spiced whipped cream layered in ascending order and

topped with a ring of toasted almond slivers
